Yum!


Tonight I tried making a new dish for my family, and I must say it was delish! It was really, really good...good enough for me to want to blog about it. I made an Eggplant Lasagna. Very low-cal and saturated in flavor. I just got The Biggest Loser Cookbook. I found this recipe in there.

I am so impressed with the quality of this recipe. Both of the men in my life gobbled it up without any hesitation! Leonard even said it was a recipe to make again. Every time I try a new dish, we finish the meal with one simple question, "Do I make this one again or not?" He said yes. He even suggested I make it for our monthly dinner date we have with some friends of ours. So I know he really enjoyed it and isn't just being polite because I clearly enjoyed the meal so well. It was particularly enjoyable because the portions are big and are still only 200 calories per serving. To give you an idea of how big the portions are--you make it in a 9x13 pan and it makes 6 servings. That's a lot of food. Plus we feel totally stuffed and I do not feel as though I gave up anything for the sake of eating a healthy meal. I actually feel as though I cheated a little. I still feel almost guilty, that something that good, could possibly be "allowed" in my diet...almost.

So now, I have high expectations for the remaining 124 recipes left in the book, and am eager to try another one out tomorrow.

That's a lot of serving for the calories alright! I didn't know they had a cook book. And I bet they mention it in every show. I watch that show LOL!

That's amazing. I can't believe you get that much food for 200 calories.

P.S. I'm totally into that show. I thought I'd hate it, because it seemed really exploitative. Instead, I find it inspiring.

Wow, that's awesome! Now I wanna try it. I've never bought eggplant before...

I do the same question after a new meal. I usually say something like, "Speak now or I'll make it for the rest of our lives." That gets the honesty out there :)

I'll have to check out that cookbook! I received the "Deceptively Delicious" cookbook as a gift once but didn't care for the recipes in them because of taste, texture, sometimes both. But that sounds so good! I remember the first time that I ever had lasagna ... it was with you! You babysat Nathan, Michelle, and me as our parents went to a wedding, I think, and Anita had left lasagna for us to eat.

MMMmmmmMMMmmmmmmm!!! Say that the way Bill yells when he's having good food. Hahaha! I saw that cook book and did a double take. Jacki was telling me all about that show. ( I never watch tv, unless it's Suze Orman...I know...boring), but saw one part while Jacki was here. A see 200lbs. 0 lost. CRYING woman. I'm like..."And...You like this how? How BIG are these p people? I see big huge numbers!" That was enough for me!

Well..I'm glad the cook book is good. Maybe I'll get J a copy! You two seem to like the same stuff. NICE to see your tech saavy implementations too! You ROCK! Your body will be a ROCK too! Hope your brain doesn't become a ROCK. Maybe you'll be a ROCK STAR! Oh cut it out....I'm gone.
